Easy Green Fel Eggs and Ham

Skeptical of trying weirdly colored food? Rest-assured there’s nothing unnatural in this version of Fel Eggs and Ham, so you can eat all you want for breakfast (or lunch, or dinner…) and be ready to tackle the day!

Green Eggs and Ham

Ingredients

Fel eggs:

  • 4 eggs
  • 4 fresh basil leaves
  • pinch of salt and dash of pepper

Fel Ham:

  • 2.5 lb fully-cooked turkey ham
  • 1 cup fresh basil leaves
  • 2 cups fresh spinach
  • 1-2 Tbsp olive oil

Notes

  1. Using fresh basil is important to get the bright green color, so dried cannot be substituted in this. Plus the taste of fresh basil really can’t be beat.
  2. You can use an actual uncooked ham if you want. I chose turkey because it’s more cost-effective.  Just keep in mind that you’ll have a longer cook time.
  3. For the ham coating, a food processor is preferable, but use what you have available. If using a blender, you may need to stop several times to scrape down the sides and push the leaves to the center.
  4. The olive oil measurement isn’t exact. Start with 1 Tbsp and add more if you need it to get the right consistency.

Directions

  1. Preheat oven to 350°F.
  2. Place ham in a greased or non-stick baking dish.
  3. In a blender or food processor, add 1 cup basil, 2 cups spinach, and 1 Tbsp oil. Pulse until mixture starts to come together, adding more olive oil as needed to achieve the proper consistency. You want the mixture to stick together and be thick enough to coat the ham.
  4. Spoon or pour the mixture over the ham. Bake 25-30 minutes or until heated through. If using a real uncooked ham, bake 25 minutes per pound.
  5. While the ham is baking, heat a non-stick skillet over medium heat.
  6. In a blender, add 4 basil leaves, 4 eggs, salt and pepper. Blend to combine.
  7. Pour egg mixture into skillet and cover. Cook 3-4 minutes.
  8. Remove lid and stir to scramble. Continue cooking uncovered another 1-2 minutes or until eggs are set.  Scoop onto a plate.
  9. When ham is done, slice thickly and serve alongside eggs.
