I made a quickĀ video of this recipe too. Go check it out šŸ™‚

Ingredients

  • 8 oz white button mushrooms
  • 4 oz softened cream cheese
  • 2-3 T chopped frozen spinach, thawed
  • 1 T grated Parmesan cheese
  • 1/4 tsp garlic powder
  • pinch of salt

Notes:

  1. You canĀ use fresh spinach in place of frozen. Just chop up a handful of leaves and quickly sautĆ© in a pan over medium heat for a few minutesĀ until wilted.
  2. Get creative with your seasonings–try rosemary, onion powder, or basil.
  3. Add a sprinkling of extra Parmesan or a few panko breadcrumbs on top for a nice finish.Ā
  4. You can prepare the filling a day ahead of time! Just keep it in the fridge overnight and don’t fill the mushrooms more than 30 minutes before you plan to bake them.

Directions

  1. Preheat oven to 350Ā°F.
  2. Carefully remove stems from mushrooms and brush any dirt off the tops.
  3. In a medium bowl, combine cream cheese, spinach, Parmesan cheese, garlic powder, and salt. Mix well.
  4. Using a small spoon, add a dollop of the cream cheese mixture to the center of each mushroom.
  5. Arrange mushrooms in a single layer on a greased baking sheet (or in a non-stick baking dish).
  6. Bake for 15 minutes.
  7. Serve warm and enjoy!

Monster Omelet

Ready to be full for hours upon end? This monster 4-egg omelet is stuffed to overflowing with healthy goodness that’ll keep hunger at bay.

IMG_2880

Ingredients

  • 4 eggs, scrambled with small amount of milk
  • Cheese of your choice (See Notes)
  • 1/3 cup sautĆ©ed veggies (onions, mushrooms, spinach, carrots, etc)
  • 3 slices bacon, cooked
  • 1 fresh Roma tomato, diced

Notes:

  1. In the game you use a Giant Egg, but since those are hard to come by, just use a few large eggs.
  2. You can use any cheese you prefer, but the most authentic would be Darnassian Bleu, as that’s the same icon used for the finished omelet.Ā

Directions

  1. Spray a 10-inch skillet with cooking spray or evenly coat with olive oil. Place on medium to medium-high heat.
  2. Pour eggs into pan. Salt and pepper to taste. Cover with lid for about 6Ā minutes, or until eggs areĀ just set.
  3. Carefully run a rubber spatula around the outside edge of the eggs to loosen them from the pans. Then slide the spatula under the eggs and flip them completely over.
  4. Add cheese, veggies, bacon, and tomatoes on half of the eggs. Fold the omelet in half to cover the fillings. Enjoy!

Curiously Tasty Omelet

In this twist on the basic omelet, you get to decide what makes it “curiously tasty” by picking what goes inside.

Stay safe with mushrooms and cheese, or be adventurous with boar meatĀ and turnips. Add a dash of soy sauce even! The point is to get creative and use what you have. May your omelet be just as tasty as it is curious šŸ™‚
